- 2 lbs perch fillets
- 2 tbsp olive oil
- 1 juiced lemon
- 2 cloves garlic minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- salt & pepper to taste
Preheat your grill to medium-high heat.
In a small bowl, mix together the olive oil, lemon juice, garlic, basil, oregano, thyme, salt, and pepper.
Place the perch fillets in a large resealable plastic bag and pour the marinade over them. Seal the bag and toss to coat the fish evenly. Let the fish marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
Remove the perch from the marinade and discard the remaining marinade. Grill the perch for 3-4 minutes on each side, or until it flakes easily with a fork.
Serve the grilled perch with your choice of sides, such as grilled vegetables or a salad.
